I have been told that it is possible to customize or change the header fields
(eg. To: CC: Subject:) in an email. I would like to change the font, bold
the words and add colour to these fields. Does anyone know how to do this?

You may have been misinformed. While it is possible to create an Outlook custom form with a different look for the main page, that's not really a practical solution because it would affect only Outlook recipients and other recipients would be unable to see any attachments you sent.
