how do I change the dollar sign?

Format>Cells>Number>Currency

Choose from the dropdown.

If you want it permanent for that workbook, change the currency style in
Format>Style>Currency>Modify.

To have the change in all new Excel workbooks would require a change in your
Windows Regional and Language Options..

In 2007 choose Home, click the quick launch button at the bottom right of the
Number group, pick Currency, and open the Symbol drop down.

It is considered bad etiquette to use all capitals in newsgroups - it shouting
