How do I add a dictionary to Word 2002?

Do you mean a spelling lexicon (custom dictionary) or a dictionary add-in
that provides definitions? Do you have such a dictionary to be installed, or
are you trying to create one?

I would want to add dictionaries / proofing tools in other languages than
English, such as Spanish and Icelandic.
 
Each language version of Word comes with proofing tools for several
languages. For example, the English version comes with English (all
flavors), French, and Spanish. To add additional languages, you must buy
Microsoft Proofing Tools, which are currently available only for Office XP
and Office 2003:

The Proofing Tools package includes spelling and grammar checkers for dozens
of languages, and you can install as many as you like.
