How can I track changes to database?

Ok, since I am really a novice to Access (indeed, to relational databases,
and databases of any sort), please be patient if I do not word my question
properly.

Although I am the only one who uses the database in our office, I do not
recall the exact date of the last several changes. I added a couple of
fields for sorting purposes, then I had to change the data within another
field, etc. Is there an easy way to see the dates of those modifications?

Dates of record or field value changes are not stored anywhere in the table.
There is no audit trail.

Only if you keep track of it yourself. That information is not stored
anywhere in your Access database; Access neither knows nor cares who
made a change or when.

Keep backups!! It's handy to have a naming convention such as naming
folders

20050829

for the August 29 version of the database.
