how can i MANUALLY insert a signatures and contacts Outlook 2003

how can i MANUALLY insert a signature in replies in Outlook 2003, just as i
could in earlier versions of outlook.

also how can i manually insert contact name files of my contacts (old way:
insert object, contact file) in this new version?
