1. Lock the screen
2. Password-protect your pst file
3. An eight year old should NEVER be using an internet-connected
computer unsupervised.

Indeed. Even my very responsible 17-year-old was denied a LAN drop in her bedroom. Instead, she has her own drop in a corner of the kitchen/family room that everyone passes by and is used to being asked what she's doing while she's online.

Give her her own account and make it of type Limited.

Define a separate account for your daughter to use. She then gets her
own profile. Each profile has permissions which allows only that user
(and the administrators) to access those files, so when she is logged in
she cannot see your profile files, which includes your Outlook message
store.

Never but never let your child(ren) use a Internet connected computer. I
unplug the lan wire and pull off the connector from it and then I let my 7
year old play games on the computer. The computer is in the family room and
one of us(adult) is always there at the time.
