How can I get the Office icon to display on my screen.

In previous versions of Office, you could have the Office Icon show up on
your screen with all the Office Suite (plus other files if you wanted). I
upgraded to Office 2003 and I can't find that functionality.

Outlook 2003's icon now appears in the Notification area of the System Tray
when it's running. If you want a shortcut to Outlook on your desktop, just
right-click and drag one there from your Start menu.
