When you hold ALT and key in three or more numbers using the number pad you
get different symbols. How many are there and what are they?

In the Insert Symbol dialog, change the "from:" setting to "ASCII
(decimal)," and you will see the code for any character you select in the
dialog.

You can also open Character Map (usually in Accessories>System
Tools>Character Map.

When you click on any letter, it gives you the <Alt><Number> code for that
letter OR symbol.

Every character can be entered this way if you know the code. If you have
appropriate fonts installed there tens of thousands of characters
available - see www.unicode.org for more information than you probably want.
