I want to force Outlook to use .msg as file type by default when saving a
file. Is this possible in recent versions of Outlook? If yes, how?

No, but when you drag & drop the messages out of Outlook into an Explorer
window they will be saved automatically as msg-files.

Outlook provides no such option.

Using the Outlook SaveAs or drag & drop methode results in msg-files
hardly to recognize. They all are named to their subject + ".msg" and
the date/time stamp of the file depends on the moment you save them.
Or, when opening then a week later, the date/time stamp is changed
again (to 'now') .

Take a look at http://www.slipstick.com/ for Outlook add ins, by
example MailToFile (www.mailtofile.com/en/).
With a good tool the filename of the msg is easy to recognize, the
date/time will be the 'SentOn' of the email (and won't change after
opening the msg).
