Getting the Notes out of OL 2003

Is there another piece of software (other than Outlook 2007) that I can
export all my Notes to? I'd rather not use the OL 2007.

I don't quite understand your question. Are you saying that you are not
going to use Outlook 2003 anymore and require your notes in another format?
if so, just use the import/export function to export to a file such as csv
format that can be opened by any spreadsheet application
