Is there a way to not have your name show up as the sender of an email when
someone you sent an email to forward it to someone else? i.e., When I send
an email to someone and they forward it on to someone else, I may not want
others to see that the email came through me. Is there a way to block that?

no, you can't block it unless your company uses IRM and you don't allowing
forwarding. Best option is to tell them not to forward or to remove your
name and address if they do forward it.
