How can I automatically have WORD sum a column of numbers
that are not included in a table?
An example would be as follows:

My word document would include:

10 20 30
40 50 60
50 70 90 TOTALS

Note the bottom row automatically summed the prior two
rows.

I know that this can be done using tables, but
unfortunately I cannot use a table in my application.

Could you not use a table that didn't have any borderlines? Who would know
the difference?

Otherwise, I think you would have to bookmark each individual value and then
sum use a formula field to tally the values. For example, bookmark 10 and
name it a, bookmark 40 and name it b then use { = sum(a,b)}
 
It won't, but it's the only way I know of to sum figures that aren't in
tables.
