Format text in protected document (fillin in forms)

When I create a document in Word and protect using the option 'filling in
forms' how can the I change text format (colour, size, bold...) writen in the
form fields protected??

When filling out the form, you cannot format the text in the form fields.
Instead, apply the desired formatting *before* protecting the document.

Alternatively, if you do want users to edit (parts of) a form, add a section
(by inserting section breaks) and leave it unprotected.
