Form Template

I have created this lovely form template. I have installed it on our
inspector's laptops and they are going out and filling it out in the field -
great. When they save a copy to me as a doc, I am not able to spell check or
even edit their entries in the fields. This is a major problem because these
people have horrible spelling and grammer and I can't send out their reports
without adjusting what they wrote.

What is the point?

Now I have another question that has to do with my form. When someone fills
out my template form and saves it as a document, I cannot rewrite anything
they have ut in the fields, even when I take off the protection. Is that the
way it is design? Once you save it it is carved in stone and the only way to
edit it is to start over with a new template?
