When I click to add a follow up flag to an email message I don't get the
option to add the date for follow up. How do I re-configure Outlook 2007 to
offer the follow up date?

Right click on the item and choose the Follow-up options there for date
sensitive follow-ups

This seems to be only for my Exchange account emails - but I used to be able
to set the follow up date. Now, when I left click the flag icon, it says
"set flag". When I right click, it says "Add to Quick access toolbar,
customize quick access toolbar, show quick access toolbar, minimize the
ribbon."

Did you try restarting outlook or rebooting the computer? When the menus
aren't the right ones it often means a resource issue and a restart or
reboot fixes it.

Tried both - and it still doesn't have the options of "today, tomorrow...."
that I am used to.
