Does it exist a small freeware that gives the type of flashrom on a
mobo e.g. 28F1000 or 27EE2000 and so on ...

This is just a thought, but it might be worth posting something on
rec.games.video.arcade.collecting, as a lot of talk goes on there about
programming video game chips. Fluke Pods and things like that. I think
there is / as someone called "Art from NY" who sold chip programming
tools.

Uniflash?
It's a very powerful and up-to-date freeware BIOS flash programme with
development and updating resumed fairly recently. It supports a very
large variety of BIOS chips.
There is no need to use the programme's full facilities - when it is
started up it detects and displays the BIOS chip type on the motherboard
(28F1000 or whatever). If that's all you need you can note it and exit
the programme there and then.
(Must be used from a DOS boot disk, will not run in Windows)
