Excel 2002 Pivot Report Mystery

I have created a pivot report in Excel XP and have encountered a
problem. The report is created for one field, in a columar format.
When the report is completed, the capability to filter is evident, for
both the various values in the field, and for the Data that has been
calculated in the report.
The field, Project # has 35 unique values, fron 101 to 135, and I have
calculated two Sums, two averages and one count for each of these
fields, seven rows of calculations for each project.
When the filter list is displayed for Project #, I clear the Show All
check box and select one of the projects to be the only one displayed.
The drop-down filter arrow for Data is still visible, so if I open it
and choose to display for example counts, only that data is displayed
for the chosen project.
The problem is that the filter arrow for Data has disappeared and I
can not redisplay all the data unless I close the file, dont save the
changes and reopen it.
My question is: What am I missing?

If you uncheck an item in the data dropdown, you'll have to drag it back
into the pivot table layout when you want to see it again. There's no
way to keep the unchecked item in the dropdown list.
