The everyone group was deleted, does anyone know
what the default everyone group looks like, so I can re-
create it?

I run mmc, and open up the Console, and view the local
groups and users, and before I had a everyone group, but
now it is no longer associated to the local groups on
this machine.

So, if I try to re-create the everyone group, it says:

The following error occured while attempting to create
the group everyone on computer <LOCAL COMPUTER>:

The account already exists.

But if it exists, why is it not associated with the local
group policy, and being displayed in the local users and
groups?

It's not a group, you should never see it in a groups
list.

Everyone is what's called a built-in security principal -
it cannot be changed or deleted.

When you're searching for users/groups/whatever, you need
to make sure that you're also searching for "Built-in
security principals" in the Object Types of the search.

You will see Everyone, and some other built-ins, listed
with groups when you are viewing the list of things that
you may add into a security descriptor.
You will not see Everyone, or most of the others, when
you look at the list of groups to manage (add/delete) groups.
