I received an email from my employer which is an electronic payslip. I have
saved this to file as requested, but when I open it, it asks for me to select
the encoding that makes it readable. Nothing seems to make it legible. I have
Windows XP. Please help someone and please tell me in idiot language as I am
not very computer literate.

It sounds like the attachment might be related to an application that you do not have installed on your computer. Since you didn't specify what file extension these files have, I'd suggest you ask your employer how you're supposed to handle them.

Ask your employer for the solution - they will know what program they used
for sending the payslip.
