If I have a main email address and 4 aliases and those 4 aliases are
programmed to go to my main email address, how do I create accounts to be
able to pick which email account I want sent with certain emails?

If you have the 4 email aliases then couldn't you just create 4 email
accounts and have each account set for each of the aliases that either
you or your mail provider set you up with. That way when you reply or
send emails you should be able just to select which account you want to
send that particular email with.

If they're truly aliases (i.e., they all deposit incoming mail into the same
mailbox), then the replying account for each reply would have to be chosen
manually. If the four addresses each have their own mailbox on the ISP,
then with one account per address, Outlook will automatically reply via the
receiving account.
