I do not want to include the addresses of my contacts when I send emails to a
number of people at the same time. How do I remove the addresses without
going through all ttheBCC stuff??
 
You don't.

How difficult is it to click View>All Headers or Alt+V A? Doesn't seem like
a lot of "stuff to go through".
 
If you do not want your recipients to view or have access to the addresses of
others, you must use the BCC field. The main reason being that even when only
the name is displayed, the recipients can simply right-click on the name and
select Properties to reveal its address.

You cannot send e-mail using a name only. Whether the e-mail address is shown or
not depends on either the recipient's client app, the results of which are
maintained in a cache on your system when you reply, or if you use the contact
list when composing, in some cases it can be formatted from the contact file of
certain e-mail applications (I don't believe that Windows Mail is one of them),
but as I mentioned previously, the e-mail address will still be viewable
 
Use the BCC: field if you don't want the recipients to see each others email
addresses.

If you used Outlook Express on XP, and sent to multiple recipients in the
To: or CC: fields, every one of the recipients could see the others email
addresses. What you see in the compose window is not the same as what they
see.
