Where does Document properties get date information for
the Statistics tab from? For instance where does the
Create Date and Modified Date field information from? Can
the Create date be later than modified date?

In theory, DateCreated is set lierally when the file is created (ie when you
click New on the File menu), and DateModified is set every time you save.
But there's obviously a bug in there because sometimes the CreateDate IS
reported as earlier than the last modified date. I've not seen a pattern to
it, but moving files between computers seems to affect it.

understand why happened on one workstation and not on
others. Just wondered where it got times from.
Workstation Date & Time properties, I assume.
 
I've also noticed that the PrintDate can be earlier than the CreateDate when
you use Save As, since the new file retains the PrintDate of the original
file until you print and save it again.
