Display the "&" symbol??

Where? In a caption? To do that you have to double-up the "&"
characters, so that Access knows you aren't using the "&" to mark a hot
key. For example, specifying this:

Gilbert & Sullivan

as a caption will only display "Gilbert _Sullivan". But

Gilbert && Sullivan

will display "Gilbert & Sullivan".

If you want a caption or label to display &, use && instead: e.g.

Fish && Chips

to display Fish & Chips.

If you use a single &, Access will treat the next letter as a "hotkey"
and underline it - e.g. a Button caption of

&Close

will display with the C underlined, and typing Alt-C will fire the
button's Click event just like a mouse click.

Maybe now is not a good time to admit that "Ham & Eggs" actually popped
