Display problems

When I turned on the computer this morning my display was set at lowest colors. I tried to reset it to highest, but the option was no longer there. When I click on the drop down menu, the only thing there is lowest
I rebooted of course, and then tried 3 different system restores. None solved the problem. Can you help? I am having an esp difficult time reading things, like help menus, etc
I also tried uninstalling the monitor and rebooting but it didn't help. Perhaps I didn't do that right

Reinstall the video adapter drivers. If you do not have them on a CD,
visit the video card or chip manufacturer's WEBsite for a free download.
