Disallow E-mail deletion

Hi all,
We have a couple of employee's that will be leaving the company pretty
soon (under questionable circumstances) and we don't want them to have the
ability to delete items from Outlook. Is there a way to disallow the
deletion of e-mail items in Outlook (all versions)?

Are they connecting to Exchange because you could enable deleted item
retention.

Ps if its questionable circumstances why would you give them time to do
anything like that - wouldn't you escort them off the premises.
Pps Not sure of the legality but and if you are using Exchange you could log
into their mailbox beforehand and export.
 
Yes, they are connecting to and Exchange server. We currently have Deleted
Item Retention enabled, but, Del Item Ret only works if the items were sent
to the Deleted Items folder before being deleted. If the user holds down
the Shift key while deleting, the messages bypass she Del Items folder and
therefore are not tracked by Del Item Retention.

This is a weird case, normally they would be escorted, but the individuals
leaving have to train their replacements and require access to their
mailboxes, catch 22 if you will.

I already exported their mailboxes, but the VP would like to keep
"everything" in their mailboxes, he wants nothing deleted and it's too
cumbersome to extract the mailbox every hour or even every day, inevitably,
things will be deleted.

Any other ideas?
