When you get a spam email, the address automatically goes into your address
"Select Recipients" of your email addresses. I cannot find a way to delete
this name out. If I got to New Contacts, and delete the name out, then it
wants me to put in another. If I do not. I get a "Unknown" in my
addresses. Any suggestions?

I am having trouble understanding you.
If you want to remove a name from contact list, you open CONTACT, not New
Contact.
Contact is where the names/addresses are stored.
New Contact is just a form where you add a new name into the contact list.

Email addresses from incoming messages do not automatically get added to
your contacts.
However, there is a setting to add outgoing recipients to your contacts.
Tools - Options - Send -
uncheck "[ ] Automatically put people I reply to in my Contacts list"

"New Contact" is the way to add new contacts.
To remove or add or edit your contacts, open the Contacts folder by clicking
on the Contacts button on the toolbar, or by clicking on "Tools" - "Windows
Contacts"

Thanks Dave, that's exactly what I was looking for. It's now unchecked. I
also noticed that mail sending format can be in HTML, or Plain Text. Which
should be checked? Mine has HTML checked. I can't recall, but I think my
Outlook Express had Plain Text checked for sending.

Neither for mail, nor for news HTML is needed (in most NGs it's
forbidden).

Unless one would really need a mail with bells and whistles (in
extraordinary cases) one should always use Plain Text.
