I copied my preferred User Profile (named "Steven") to the Default User Profile so that all future users would have my preferred customization. However, I notice now that when I look at the file structure for any New User created or for the Default User, where I should see "User Name's Documents" or "User Name's Music" or "User Name's Pictures" (or ditto for "Default User") I actually see "Steven's....." regardless of what the New User's name is or if I'm looking at the Default User. Is there an easy way to revert to a standard position ?

1) Did you COPY it manually or did you use the proper method through the
advanced tab of the system control panel? (Selecting that "Everyone" be
able to use the files/folders.)
2) Afterwards, you should go into the "Default User" profile and erase the
following:

C:\Documents and Settings\Default User\Application
Data\Identities\{SIDNUMBERDIRECTORY}
C:\Documents and Settings\Default User\USERNAME Documents

(If you install some other apps, netscape, etc - or if you have customized
some apps in a way you don't want default for all new users, you may have
more erasure to do.. Otherwise, that should cover the problem you are
seeing now.)

Many thanks Jamelia

Just so I'm 100% clear, do I delete the XXXX or the entire "Owner=XXXX" ? Also, should I expect to see the entry "Owner=XXXX" once or more than once in the Desktop.ini file, or is the Desktop.ini file user specific

Yes there is..
Open the file Desktop.ini and delete the name after "Owner=XXXX"

Thanks for your reply. I'm going to try Jamelia's suggestion first, since based on her approach I found KB 321281 which seems directly relevant.
