I have Excel 97 and it defaults to a landscape mode on
every new file. Can I set the default so it will open in
portrait mode with each new workbook?

Do you have a book.xlt template file in your XLStart folder?

If yes, then open that up and see if all the sheets are set for Portrait.
Sheet.xlt is used when you add a new sheet to an existing workbook--you may want
to check that, too.

If you don't have a book.xlt, then take a look at your printer settings.

Windows start button|Settings|Printers
right click on your printer and see if it's set up for landscape.

(xl2002 under win98 was smart enough to look there for my default
orientation--when book.xlt didn't override it.)
