Can I have a dde link that will find the document name or
topic in a cell on the worksheet? What is the proper
syntax to do this?

DDE formula links can only be literals, i.e., fully specified with no variable
components. You could use a macro to build up text strings that look the same as
the intended DDE links, then copy the formulas and paste-special as values on
top of themselves, then Edit > Replace replacing all = with =. I believe that's
the best you can do.
