When you are creating a new email you can click on the Options... button on
the toolbar and uncheck the box "Save sent message to:"

Is there a way to make a button to uncheck that option so I don't have to go
into Options... uncheck it then close the window?

I've looked all through the toolbar customization and didn't find anything.
Is there a way to do this with some kind of script?

Tools>Options>E-mail Options. Uncheck "Save copies of messages in Sent
Items folder".
 
That will stop every email from going to my sent. I want most of my emails
saved in the sent, but if I'm just sending an email to a co-worker about
going to lunch. There is no reason that this needs to be kept so I'd like to
tell it not to save it. I do this currently but there are too many steps and
I'd like a button to do this.
