Create Folders Within Sent Items

I need to retain and file my Sent Items based on certain subjects for legal
reasons. So far, I have (1) Created folders in the Sent Items folder, and,
(2) Moved snt items to applicable folders.

The problem?
When an e-mail remains in the default Sent Items folder, the "To" is
displayed.
When an e-mail is moved to the sub-folder, the "To" is not displayed, only
the "From", which is me. Locating a particular legal correspondence,
therefore is tricky and time-consuming.

Question?
What can be done? What am I missing? [Leaving ALL sent items in one folder
is not efficient, because often we are reviewing legal correspondnce for a
particular matter. All items in a single folder is simialr to never buying ay
file folders for your filing cabinets.]
