I have done some formating and tables copied from word. How to I
prevent recipient from copying my work and using it as their template?

You can't, actually, except under some fairly strict conditions. If the bits
are on someone else's computer, they can do what they want with it. Copyright
your material, if need be, and register the copyright so you can prove
plagerism at a later date.

if you make it into a pdf file, it will look the same, but they will not be
able to open it in Word and muck with it.

Nonsense. Copy/Paste works just as well from Adobe Reader (or any other PDF
viewer) as from, say, Word.
