copy of outgoing and incomming emails

We have an exchange server. I would like a copy of emails (outgoing and
incomming) placed to a folder based on customer address, ie. emails to
customer"z" would go to customer "z" folder as would emails from customer
"z". I would like this to happend for all e-mails in our company. Any
suggestions?
