Converting Message Format - Any Experts know?

Hi,

I understand that when sending replies, Outlook always
uses the format of the original message to ensure that the
reply can be read when received.

But I would like to change the message format of received
email when replying, is there any way to do so?

Any experts know about this?..
 
When replying you can change the message format by Format-> HTML

Note that people probably sent in Plain Text for a reason. Changing this
might effect the way they can view the message.

But, I've got a further question. In what situation will
my receiver not able to view HTML?
 
It has to be supported by the mailserver and mailclient. The last one isn't
a real issue anymore but the some providers convert all messages to Plain
Text. In the "old days" it was just a matter of the mailserver not
supporting the format but nowadays it's also a way of fighting spam on low
end servers for cheap/free ISP's.
