I'm trying to combine all my different "contacts" folders into one folder.

No matter how I copy or . . . what ever, it will not combine the folders
and insists on making another copy of that "conatct" folder as a subfolder
under the current folder.

Is there a way to do this?

Yes you can. You need to select all of the contacts in the folder (not the
folder itself) and then drag them to the destination folder.

Open the folder containing the contacts you want to copy. Click CTRL-A to
select them all (you may have to click on one contact first). Then click
Edit>Copy to Folder and specify the Contacts folder you want as the
destination. Click OK.
