Is there a way to remove the 'delete" command on
the "edit" drop down menu?

Afraid I will accidentally delete a sheet

Which are you talking about? There is a "Delete" for selected cell(s) and a
"Delete Sheet".

The "Delete Sheet" has a warning attached. Is that not enough?

You could always go to Tools>Customize and select "Edit" drop-down on the
Worksheet Menu Bar then drag the "Delete Sheet" off the drop-down.
