I created hyperlinks between the section headings in the text of a document and their headings in the table of contents. However, the color of the text in the table of contents is purple, even after I highlight it, go to Format then Font and select black. How do I change the color of text that is hyperlinked in the table of contents?

You will need to change the style colour of the
hyperlinks and followed hyperlinks. The way you do it
depends on your version of Word. If you need any help
with this just ask.

If you have inserted a TOC field, the TOC entries will be hyperlinked but
will not be formatted with the Hyperlink character style. It sounds as if
you have created the TOC manually? If so, as Judith says, you can remove the
Hyperlink character style, but you're really reinventing the wheel here.

I got sidetracked with other work but am working on this document again with the TOC problem again - how do you change the color of the hyperlink font?
