We have a domain called (company).local and I would like to change it to (company).com. Is this possible? And if so, what would be the easiest way to do this?

You cannot rename domains in Windows 2000. If you are still in mixed mode
and have an NT 4.0 BDC on the network there is a complex (and not
recommended at all) procedure available to bring the domain back down to NT
then re-promote using the desired name.
Another alternative would be to upgrade to Windows 2003 which has some
limited domain rename tools but these have a lot of restrictions on their
use.
Best advice here is to stick with what you've got and make it work for you.

If you are in with Windows 2000 Server Domain Controllers no its not
possible, You have to migrate to a new domain.

You do not want your internal domain name to be real anyways. What you are
doing is the exact opposite of what most people want to do. Have a look at
the following articles on recommendations for your internal domain name. It
really has very little to do with anything anyways and your better off
having a .local than a .com(unless there is no real domain with this name).
