Changing heading styles in existing templates

I'm trying to alter the heading styles in an existing template, ie I want
'Heading 2' to be normal and not italic. I just can't find out how to do it.

I've tried creating a new template, but it still has some built in named
headings, which I just can't get rid of.
 
I've already had a look at some of your online stuff, very helpful thank you.

But I'm finding that I set the formatting, tick 'add to template', go down
the headings list , then come back to find the formatting I set for earlier
headings has changed. It doesnt seem to 'lock' the formatting
 
Possibly the document is corrupt? Or perhaps you have either "Automatically
update" checked for the style or "Automatically update document styles"
checked in Tools | Templates and Add-ins.
