change quoting method on the fly?

The default way that message replies are set up for our system is using the
"-----Original Message-----" followed by the message that's being replied
to, indented. For some messages, I'd like to use the style where you
precede each line in the source message with a '>'. Is there a way to
change this format on a message-by-message basis?

If you use Plain Text, the tool Outlook Quotefix will do this for you. See
