I am trying to change the height and width of a single cell...not a entire
row or column. the single cell I'm working with is larger than the other
cells above/below it and on either side of it. How do I do this?

You can't. The height of a cell is the height of that row, and the width of
a cell is the width of that column.

You may achieve a similar effect to what you've requested by merging cells,
but most experienced contributors to this group will tell you that merged
cells are the spawn of the devil and should be avoided like the plague.
What may be more acceptable to use Format/ Cells/ Alignment to centre text
across a number of cells.

You can't. Every cell in the same row must be the same height and every cell
in the same column must be the same width.

An alternative is to merge cells but I would not recommend this as merged
cells usually cause unforeseen problems.

You may want to consider putting your table in Word. It's not as powerful a
caculation tool as excel but you have a lot more formatting options.
