Can't install XP Pro

I'm trying to do a complete new install of XP Pro, over an OEM's XP Home edition.
After running a full format and installing XP Pro and after rebboting at the end of the install, I'm still on the OEM's XP Home platform. It's as if I hadn't installed Pro.
During the install, there are no error messages or any indications that the Pro isn't being installed. The install runs normally.
The PC is a VPR Matrix 9750, using 2 hard drive arranged in a raid array of both 120gb as one 240gb drive.

Go to Start > Run and type: MSCONFIG , and hit enter.
Click on the BOOT.INI tab and then click on "Check All Boot Paths"
to delete incorrect boot paths.

If the above does not correct the issue, then:

Right-click on MY COMPUTER and select:

Properties > Advanced > Startup and Recovery Settings > Edit

CAREFULLY edit your boot.ini file to remove the SECOND entry.
Your boot.ini file should then look similar to this:

[boot loader]
timeout=30
default=multi(0)disk(0)rdisk(1)partition(1)\WINDOWS
[operating systems]
multi(0)disk(0)rdisk(1)partition(1)\WINDOWS="Microsoft Windows XP Professional" /fastdetect
