Can you read deleted text?

I emailed my resume to a prospective employer. I had changed the resume a
few times, adding and deleting employers (saving along the way). The
prospective employer seemed to know I had another job listed on the resume
that was not on the saved version I sent her. Can people read text you
previously saved on a Word document even if it was deleted on the copy you
sent them?

If you had 'Track Changes' running while editing your document, the deleted
text would remain in the document until you went through the process of
accepting/rejecting the changes.

It would also be possible for a savvy user to see what had been changed if
you had 'allow fast saves' switched on or you saved the file via
File|Versions

I would suggest sending the resume as a pdf file. But omitting a reference
to a previous job could be considered dishonest with possible consequences.
