Can you prove when a word document was created if it's been edite

How can I prove I wrote a document last week, since I have edited it several
times since? The only thing I can see is the date I wrote on it, but each
time I edited it, I also changed the date. Can I prove the date of it's
origin?
 
As long as it's the original file, the creation date will have stayed the
same. You can see this on the Statistics tab of File | Properties, or you
can insert it in the document using a CreateDate field.

It depends what you mean by 'prove'. You may be able to satisfy yourself by
looking at the File Properties, but none of the (many) dates in a document
is guaranteed or would constitute legal proof.
