Can you convert or save a Word file as a JPEG of GIF?

Not directly. If you have Adobe Acrobat, you can create a PDF file, then
Save as a JPG or TIF file.
 
Actually, you can create one long .jpg if you have a .pdf file and SnagIt.
I've done it. :-)

Just keep in mind that, either way, if it is a multi-page doc *each page*
will have to be saved as a separate TIFF or JPEG.
 
SnagIt will create both PDFs and jpgs (and just about any other graphics
format you may require). SnagIt produces separate document images for each
Word page as pdfs. Multi-page graphics of any format cannot be inserted as
objects into Word as objects cannot cross the page boundaries.

I think we're agreeing on one point but disagreeing on another.

You can make a very long .jpg from a multi-page Word doc that's been
converted to a .pdf. You may not be able to insert that long .jpg into
another Word doc, which would make no sense anyway, but you *can* email that
long .jpg. You run into printing issues but it can be sent. :-)
