can I hide cc addresses in outlook

I would like to be able to hide all the cc's that I have on certain emails from each recipient, can I do this and if so how

Put the addresses in the BCC (Blind Carbon Copy) field of the mail header.
If that field doesn't show while you're composing a E-mail go to the View
menu and select 'BCC Field'.

Alternately you could use an application like the ones listed here:

Russ thanks for the pointer, It actually isn't in view in my outlook (2003) but under the options tab and I now have the thing sorted so thanks very muc
 
You can easily add it to your header. Method depends on version and editor,
which you'd need to specify.
