can data fields be added to an exisiting mail merge address list

I am just learning to use mail merge. It appears that once a new list is
establiished ther is no means by which one can add new data fields. I would
appreciate knowing how one can do this, or confirmation that it cannot be
done.

Not true. The data source is just a table. You can add columns.
