Is there a way that I can use the backup programme to update to the same
backup file so that it mirrors my hard drive size and files whenever I choose
to update it because useing the incremental or differentail option seems to
just add on or totally replace rather than update the existing file?

No, not with ntbackup.

Try backup program like Abakt (free).
