Backing up specified files??

I have XP Home which may not be relevant.


Perhaps some of you folks have a good way to do this.

I have a folder called Documents. This includes, at this point, hundreds of
files (and also about 7 sub-folders, each containing about 30 files).

Now, from time-to-time I back up important stuff. Basically, I have a file
called documents on my removable media and I just generally delete the
back-up folder documents and then just copy the whole mess from my hard
drive and paste it to my removable drive.

There is no real problem, but it does take some time (maybe 5-10 minutes to
do the whole thing). My question is this: I am copying maybe 650 files,
where there are probably only 15-20 files that have been changed since the
last b/u.

Is there some easy command that will do this?? Perhaps there is an easy way
to say copy files changed since 10/01/04 or something like that (then I
could do this every month or so).
