My Auto text returns a new paragraph when I hit F3 or enter. How do I get it
to stop at the next empty space?

When you create the AutoText, display all characters (The ¶ on the toolbar).
Make sure NOT to select the ¶ at the end of the text you use to create the
AutoText.
 
I tried, but it still didn't work.

If this is Word 2007, you have the option, when you create the AutoText
entry, to choose "Insert content only," "Insert content in its own
paragraph," and "Insert content in its own page."

I figured it out. You have to save it under Quick text instead of auto text
in order for it to work in MS 2007.
 
AutoText is one of the Quick Parts (building blocks) in Word 2007, yes. But
this should not make any difference.
